If you’re looking for a simple, affordable dinner that tastes like something from a restaurant, this Creamy Tuscan Chicken is it. This has quickly become one of our family’s favorite meals — it’s rich, comforting, and incredibly easy to throw together.
The best part? Minimal prep, simple ingredients, and the slow cooker does all the work.
This is perfect for busy weeknights when you’re juggling mom life, work, and everything in between.
Ingredients
For the Chicken:
• 2–3 lb bag boneless, skinless chicken breasts
For the Creamy Tuscan Sauce:
• ½ teaspoon salt
• ½ teaspoon black pepper
• ¼ teaspoon Italian seasoning
• ¼ teaspoon paprika
• 1 cup heavy whipping cream
• 1 tablespoon cornstarch
• 3 cloves garlic (or 1½ teaspoons pre-minced garlic)
• ½ cup oil-packed sun-dried tomatoes (drained)
• ½ cup grated Parmesan cheese
• 1 cup fresh spinach

Instructions
1. Add the chicken.
Place the chicken breasts into a 3–4 quart slow cooker. Set to low.
2. Make the sauce base.
In a mixing bowl, whisk together the heavy whipping cream, cornstarch, garlic, salt, and pepper until smooth.

3. Add the flavor.
Stir in the sun-dried tomatoes and grated Parmesan cheese.
4. Combine.
Pour the sauce mixture evenly over the chicken.

5. Slow cook.
Cover and cook on low for 3–4 hours, or until the chicken reaches an internal temperature of 165°F.
6. Finish with spinach.
Stir in the fresh spinach during the last 10–15 minutes of cooking, allowing it to wilt into the sauce. Adjust seasoning to taste.
7. Serve & enjoy!
Serve over pasta, rice, or mashed potatoes — and don’t forget a side of garlic bread to soak up that creamy sauce!
Thrifty Tip
• Buy chicken in bulk when it’s on sale and freeze for later.
